What sort of methods do polls use to identify likely voters?

Some of them are absolutely ridiculous. Remember in 2004 when polls showed Kerry neck and neck with Bush in Florida, and the margin of victory turned out to be almost 400,000 votes? Some polls are even showing Obama winning North Carolina!?!!!
