Because "fighting" in any sort of martial art (including MMA) is always structured. There are rules to what you can and cannot do there, and there's always an experienced individual supervising things who will step in if things start going wrong to ensure that things remain relatively safe. On the street, there are no such safety rules or people who will step in to stop the fight before it goes too far (well, unless there happens to be a cop standing right there or something).
